This very easy to make wrap is perfect for summer evenings or to take away to school or the office. Fresh, healthy and extremely fast, it is just the right thing for beginners.
Ingredients (for 4 portions)
arugula (or other salad)
2 large tomatoes
2 spring onions
green pesto (optional)
How to make:
Cut the tomatoes into slices and then into strips, also dice the mozzarella and the mango. Cut the spring onion into rings up to the light green part.
Heat the tortillas according to the instructions, while washing the arugula and removing the stems afterwards.
Roll the wrap: First, place a tablespoon of pesto in the middle (one line from top to bottom) and spread the arugula on top if desired. Then take turns spreading tomatoes, mozzarella, mango and onions. Finally, salt briefly, then fold two sides inwards and roll up the wrap. The fast mango mozzarella wrap is ready! 🙂
Tip: You can also drizzle lime juice over the salad before rolling it up.
